Lemon Sugar Cookies

Lemon sugar cookies topped with creamy lemon frosting

Ingredients
Cookies

  • 2 cups flour

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 3/4 cup butter, softened

  • 1 cup sugar

  • 2 eggs

  • 1 1/2 tsp lemon juice

  • 1 Tbsp lemon zest

Frosting

  • 1/4 cup butter, softened

  • 2 cups powdered sugar

  • Pinch of salt

  • 1 Tbsp lemon zest

  • 2 Tbsp lemon juice

  • 1 1/2 Tbsp milk

Instructions

  1. Preheat oven to 350℉ (180℃). Lightly grease baking sheet, set aside.

  2. In a small bowl combine flour, baking powder, baking soda and salt. Whisk together and set aside.

  3. In a large mixing bowl, cream butter and sugar. Beat in eggs, lemon juice and lemon zest until well combined.

  4. Slowly add flour mixture to sugar mixture. Stir until just combined, do not over mix.

  5. Roll dough into tablespoon size balls, place on baking sheets. Flatten with a glass dipped in sugar.

  6. Bake for 8-10 minutes, or until lightly golden color is seen on the bottom of cookies. Remove from baking sheet onto cooling racks.

Frosting

  1. Beat together ingredients in mixing bowl until creamy.

  2. Cool cookies completely before adding frosting.
