Chocolate-Coconut Brownie

Chocolate brownies with the perfect dash of coconut

Ingredients

  • 1 1/3 cup flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup butter

  • 1 cup cocoa powder

  • 2 cups sugar

  • 4 eggs

  • 1 1/2 tsp vanilla

  • 1 cup coconut

Instructions

  1. Preheat oven to 350℉ (180℃). Grease , set aside. (Silicon muffin pans do not require liners)

  2. In a medium bowl mash ripe bananas with a fork. Beat in the egg. Add oats, baking power, salt, cinnamon, and milk. Stir until well combined.

  3. Add the optional ingredient of your choice. I prefer diced strawberries and chocolate chips. Stir to combine.

  4. Divide the batter into muffin pan and bake for 15 minutes, or until toothpick inserted comes out clean. Enjoy for breakfast or a mid-day snack!
