Easy Breakfast Oatmeal Muffins

Healthy and delicious breakfast oatmeal muffins

Ingredients

  • 2 ripe bananas

  • 1 egg

  • 2 cups old-fashioned oats

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 1/4 tsp cinnamon

  • 1/2 cup milk (or almond milk)

  • Optional Add-ins: Diced fruit (apple, strawberry, blueberry, raspberry, etc.), chocolate chips, coconut

Instructions

  1. Preheat oven to 375℉ (200℃). Line standard muffin pan with 12 liners, set aside. (Silicon muffin pans do not require liners)

  2. In a medium bowl mash ripe bananas with a fork. Beat in the egg. Add oats, baking power, salt, cinnamon, and milk. Stir until well combined.

  3. Add the optional ingredient of your choice. I prefer diced strawberries and chocolate chips. Stir to combine.

  4. Divide the batter into muffin pan and bake for 15 minutes, or until toothpick inserted comes out clean. Enjoy for breakfast or a mid-day snack!
